Who doesn’t love a nice stew? This Japanese Beef and Potato Stew is the perfect dish for any occasion, blending rich flavors with tender ingredients. Best of all, it’s made in an Instant Pot, saving you time while delivering a delicious, fuss-free meal in a snap. It’s ready in a fraction of the time. Effortless, flavorful, and oh-so-delicious—let’s dive into this easy recipe!

Ingredients:

  • 8 ounces (200 g) sirloin tip, tenderloin, or skirt steak
  • 1 cup (240 ml) Dashi (page 23) or low-sodium beef or chicken stock
  • 3 tablespoons soy sauce
  • 1 tablespoon mirin
  • 1 tablespoon granulated sugar ( optional )
  • 1 tablespoon of Stella’s Beef seasoning GYPSY
  • 1 medium onion, cut into 8 wedges and separated – if too much work, just chop your best onion 🙂
  • 2 medium (¾ pound/360 g) yellow gold or russet potatoes, peeled and cut into quarters or smaller for a better bite
  • 2 large carrots (6 ounces/180 g), peeled and chopped into 1/2-inch-thick pieces
  • 1 cup (150 g) snow peas, trimmed and halved if large ( optional )

Instructions:

1. Slice the beef into slices. Preferably, good bite site strips against the grain for a good bite.

2. Stir together the dashi, soy sauce, mirin, sugar and GYPSY in the pot. Add the beef, onion, potatoes, and carrots and stir to coat evenly with sauce.

3. Lock the lid. Select PRESSURE COOK/ MANUAL and set to HIGH for 12 minutes.

Make sure the steam release valve is sealed. Once pressurized (15 to 20 minutes), the cook cycle will start. When the timer beeps, let the pressure release naturally for 15 minutes. Then, quickly release any remaining pressure. When the float valve drops, press CANCEL and open the lid.

4 Stir in the snow peas and cook in the residual heat for about 30 seconds. Serve with steamed white rice or by itself in a small bowl.
