  • 4 lbs chicken wings (wingettes and drumettes, separated)
  • 2 tablespoons Stella on Fire Co. Anything Wings seasoning (adjust to taste)
  • 1 tablespoon olive oil (or avocado oil)

  • Optional: Ranch or blue cheese dressing, celery sticks, or your favorite dipping sauce

Instructions

  1. Prep the Wings:
    • Pat the chicken wings dry with paper towels. This step is crucial for crispy skin, as excess moisture prevents crisping. Place the dried wings in a large mixing bowl.
  2. Add Oil:
    • Drizzle the olive oil over the wings and toss to lightly coat. The oil helps the seasoning adhere and enhances browning in the oven.

    • NOTE: Some like to use baking powder, but I do not. I like to eat as naturally and simply as possible, and the seasoning does all the flavoring, and dry wings with a little oil are crisp enough for me. The baking powder helps crisp the skin by raising its pH, while the Anything Wings seasoning brings bold, versatile flavor.
  4. Set Up for Baking:
    • Preheat your oven to 425°F (220°C). Adjust an oven rack to the upper-middle position.
    • Line a large rimmed baking sheet with aluminum foil for easy cleanup, then place a wire rack on top. Lightly spray the wire rack with non-stick cooking spray or brush it with oil to prevent sticking.
    • Arrange the wings on the wire rack in a single layer, ensuring they’re not overcrowded (use two sheets if needed for airflow).
  5. Bake the Wings:
    • Bake for 20 minutes, then flip each wing using tongs to ensure even crisping.
    • Return to the oven and bake for an additional 20-25 minutes or until the wings are golden brown and crispy. (If your oven has a convection setting, use it for extra crispiness—just reduce the total time by about 5-10 minutes and check for doneness.)     • Remove the wings from the oven and let them rest on the rack for 5 minutes. This helps retain their crispiness.
