This Sweet and Sour Pork Ribs recipe features tender, fire-kissed pork ribs seasoned with Stella on Fire Co.’s Sweet Fire seasoning, finished with a sticky, tangy/sour-sweet sauce. Perfect for a bold, crowd-pleasing dish cooked over an open flame or in the oven.

Ingredients
Serves 2-4
For the Ribs:
- 2 tablespoons vegetable oil
- 1 rack loin back or baby back ribs (about 2 pounds total), cut into individual ribs
- 3 garlic cloves, minced
- 2 teaspoons grated fresh ginger
- 1/3 cup plus 1/2 tablespoon red wine vinegar
- 1/3 cup soy sauce
- 1/3 cup water
- 1 1/2 tablespoons of Chinese rice cooking wine or dry sherry
- 2 1/2 tablespoons of Stella’s Sweet Fire

Instructions
The Cook
- Heat oil in a Dutch oven over medium-high heat until just smoking. Brown one-third of the ribs on several sides, about 6 minutes total, reducing heat if the pot scorches or the oil smokes too much. Transfer the ribs to a plate and repeat with the remaining ribs using the fat left in the pot.
- Add garlic and ginger to the fat in the pot and cook over medium heat until fragrant, about 30 seconds. Stir in vinegar, soy sauce, water, Sweet Fire, and rice wine, scraping up browned bits. Bring to a simmer.
- Return the “seared” ribs to the pot. Cover, reduce heat to medium-low, and cook until ribs are tender and meat easily pulls away from the bone, or about 1 to 2 hours.
NOTE: Use tongs to rearrange ribs every 30 minutes, so that they’re moistened with braising liquid. (Liquid should simmer very gently; adjust heat as necessary.) - Transfer the ribs to a serving plate and tent with aluminum foil. Strain juices from pot into fat separator or strainer. Let the liquid settle for 5 minutes (you should have about 1½ cups of defatted sauce). Gently pour defatted sauce over ribs and serve.
