For this recipe, we’ll be using an air fryer, a trendy kitchen gadget that offers numerous advantages. Air Fryer Breakfast Potatoes Ingredients:

  • 4 medium-sized potatoes, washed and diced into 1/2-inch cubes
  • 2 tablespoons of olive oil
  • Gypsy or Savory Delight to taste
  • 1 teaspoon of fresh cilantro
  • Optional toppings: flake salt, grated Parmesan cheese

Instructions:

  1. Preheat the Air Fryer: Preheat your air fryer to 400°F (200°C) for about 5 minutes. Follow your air fryer’s instructions; different models, different rules but most air fryers will let you know when they are preheated.
  2. Prepare the Potatoes:
    • Wash and dice the potatoes into 1/2-inch cubes. You can leave the skin on for extra texture and nutrients. You can also cut the potatoes slightly smaller so they cook more inside, up to you, be happy!
    • Pat the diced potatoes dry with a paper towel to remove excess moisture. Drying the potatoes will help crisp their skin.
  3. Season the Potatoes:
    • In a large mixing bowl, toss the diced potatoes with olive oil, Gypsy, and/or Savory Delight. Ensure the potatoes are evenly coated with the seasonings.
  4. Air Fry the Potatoes:
    • Place the seasoned potatoes in the air fryer basket, spreading them out in a single layer to ensure even cooking. Do not let the potatoes touch each other or tack them up. There needs room between and around the potatoes for the hot air to do its job!
    • Cook the potatoes at 400°F (200°C) for about 20-25 minutes, shaking the basket or flipping the potatoes halfway through the cooking time. Cooking time may vary depending on the size of your air fryer, power rating, and the crispiness you desire.
  5. Check for Doneness:
    • After about 20 minutes, check the potatoes for doneness. They should be golden brown and crispy on the outside while tender on the inside. If needed, cook for an additional 5 minutes.
  6. Serve:
    • Once the potatoes are cooked to your liking, transfer them to a serving dish.
    • Optional: Sprinkle with chopped fresh cilantro and grated Parmesan cheese for added flavor.

  • For uniform cooking of potatoes, it is important to slice them into similar sizes. This will ensure that each potato piece absorbs heat and cooks evenly, resulting in consistent texture and flavor. Additionally, uniform potato pieces are easier to manage and reduce the risk of undercooking or overcooking.
