There are two ways of making beef stew, the hard way and Stella’s way. The 3-hour way, or the 1-hour way. The long “way” of making beef stew follows a more classical way, sautéing aromatics, and even browning the meat for amazing flavor and texture.
But let’s face it, who has the time for that? Chopping onions, garlic, and shallots, and pan-searing beef—it’s a lot of work. What if I told you there’s a way to make a delicious beef stew with fewer steps, minimal supervision, and so little prep time that you can even run errands while it cooks?

Well, grab a seat and a bottle of Stella’s beef seasoning Gypsy because we are going to show you how to make the best beef stew of your life.
Ingredients:
- 2 lbs beef chuck, cut into 1-inch cubes ( you can cut it into bigger cuts as well if you want to shred the beef later, less work )
- 3 carrots, peeled and sliced (optional )
- 2 potatoes, peeled and cut into chunks ( optional )
- 2 tbsp Stella On Fire Co. Gypsy Seasoning
- 2 Cups of Water
- Fresh parsley, chopped (for garnish)
Note: It is common to use broths, aromatics, and many more ingredients to make a beef stew, but in this recipe, we are using our beef seasoning to handle all the flavor and cut down on work.
This recipe is a piece of cake to make. Also, we are using an Instant Pot pressure cooker. You could use any pressure cooker but we prefer these digital pressure cookers due to their simplicity, automation, and safety features.
Instructions:
- Add Ingredients:
- Add the two cups of water and 2 tablespoons of Stella’s Gypsy seasoning. If you are not adding potatoes and carrots to your stew, one tablespoon of GYPSY should be enough.
- Mix the water and seasoning, Stir to combine.
- Add the beef to the pot.
- Add the carrots and potatoes
- Tip: I like to season the meat and let it absorb some of the seasoning before placing it in the pot. This introduces even more flavor to the meat.
- Pressure Cook:
- Secure the lid on the Instant Pot, making sure the valve is set to the “Sealing” position.
- Set the Instant Pot to “Pressure Cook” or “Manual” mode on high pressure for 35 minutes.
- Natural Release:
- Once the cooking time is complete, allow the pressure to release naturally for 10 minutes, then carefully turn the valve to “Venting” to release any remaining pressure.
- Check the beef, it should be fork tender, and depending on the chuck size and cube cuts you might need more time. For a super tender beef stew, pressure cook for another 35 minutes.
- Taste and adjust seasoning if needed before the extra cook.
- Finish and Serve:
- Remove the beef from the pot and serve.
- Garnish with fresh parsley before serving.

Always taste your food and seasoning to taste. Gypsy will do a great job infusing the stew with tons of flavor but how much to use is ultimately up to you. I usually use one to two tablespoons depending on the size of the chuck and whether or not I add vegetables to the stew
