In this recipe, we bring the finest ingredients and techniques together to help you create a restaurant-quality burger at home. Whether you’re a seasoned grill master or a kitchen novice, this burger is designed to impress with its mouthwatering flavor and juicy texture.
Ingredients:
- For the Burger Patties:
- 1 lb ground beef (preferably 80/20) or whichever burger patties you enjoy.
- 2 tbsp Gypsy Beef Seasoning (Stella On Fire Co.) or seasoning to taste.
- For the Caramelized Onions ( optional ):
- 1 large onion, thinly sliced
- 1 tbsp butter
- 1 tbsp olive oil
- Salt to taste
- For the Smoky Aioli:
- 1/2 Cup Mayo
- 1/2 Tbsp Ketchup
- 4 garlic cloves roasted or sautéed in a pan
- 1 tsp. Lemon Juice
- 1 teaspoon of GYPSY
- 1/2 teaspoon liquid smoke 1/2 ( hickory )
- For the Assembly:
- 4 brioche buns or whichever kind you enjoy.
- 4 slices of sharp cheddar, American, or gouda cheese
- Fresh arugula or lettuce (optional)
- Sliced tomatoes (optional)
- Pickles (optional)
Instructions
Prepare the Caramelized Onions:
- In a pan, heat butter and olive oil over medium heat.
- Add the sliced onions and cook slowly for 10-15 minutes until softened.
- Add a pinch Stella’s GYPSY, and cook for another 5-10 minutes until deeply caramelized. Set aside.
Make the Smoky Aioli:
- In a small bowl, combine the mayonnaise, ketchup, roasted garlic, lemon juice, GYPSY, and liquid some. Wisk and mix until smooth, and refrigerate until ready to use.
Prepare the Burger Patties:
If you are using store-bought patties, simply season them with Stella’s GYPSY and proceed to cook the patties. Season to your liking, but don’t be afraid… 🙂

- In a large bowl, combine ground beef, Gypsy Beef Seasoning.
- Gently form the mixture into 4 burger patties.
- Preheat your grill or a stovetop pan to medium-high heat.
Cook the Patties:
- Cook the patties for 3-4 minutes per side, or until desired doneness.
- Add a slice of cheddar, American, or gouda cheese to each patty during the last minute of cooking, allowing it to melt.
- You can cook the patties in your grill or stovetop. Up to you, but we icnluded some notes below to explan the didderences.
Grill
Best for: Those who want that classic outdoor, BBQ taste.
Tip: Preheat the grill to medium-high, and cook the patties for about 3-4 minutes per side, depending on your preferred doneness.
Stovetop:
Pros: Easier to control heat and great for year-round cooking. Cast iron skillets, in particular, give the burger a fantastic crust, similar to a grill sear, without needing an outdoor setup.
Best for: A quick, convenient option with rich caramelization.
Tip: Heat a cast iron skillet over medium-high heat, add a bit of oil, and cook the patties for the same 3-4 minutes per side.
Both methods will make delicious burgers, but if you want a smoky, char-grilled taste, go for the grill. If convenience and control are key, the stovetop is ideal.
Toast the Buns:
- Toast the buns lightly on the grill or stovetop.
Assemble the Burger:
- Spread the smoky aioli on both sides of the bun.
- Add a handful of fresh greens to the bottom bun.
- Place the burger patty with melted cheese on top.
- Add caramelized onions and a slice of tomato (and pickles if desired).
